The Napoleon Apollo 22 is a charcoal water smoker for low-and-slow brisket, ribs, fish, poultry and vegetables, with three levels of cooking space and adjustable smoke control.
Its two 55.5cm cooking grids and hanging bar give 2,355 sq cm across three levels. Brisket and pork shoulder smoke slowly on the grids over the water pan, while ribs, fish or sausages hang from the five stainless steel S-hooks on the bar in the lid, taking on a deep, smoky flavour as they cook. A stainless steel rotisserie ring takes a motor and spit, sold separately.
Three adjustable inlet vents fine-tune the temperature, and the ACCU-PROBE gauge shows it at a glance. Silicone-sealed probe ports let temperature probes in without leaks, and the larger doors with insulated handles make adding charcoal or water simple during a long cook. The 304 stainless steel grids need little upkeep and heat evenly, and the black powder-coated enamel finish is made to handle the weather. Toggle latches lock the sections together while cooking and release so they can be separated for storage or transport, and locking castors move the smoker and hold it in place.
The Apollo 22 is supplied with a water pan, a charcoal basket, two cooking grids and five stainless steel S-hooks.
