The Arc XL gas oven comes with its own wheeled stand and a placement peel to launch each pizza.

The Arc XL runs on bottled gas (LPG) and comes up to temperature within minutes. Its 43 x 52cm stone floor takes a full 16-inch pizza, and the 427mm-wide mouth leaves room to launch and turn it. The base crisps on hot stone while the crust blisters in the rolling flame above.

A burner at the side sends the flame across the chamber, and it turns up or down as the cook needs. Two layers of dense insulation and a 20mm cordierite stone hold the heat from the first pizza of the evening to the last, and the digital thermometer highlights the pizza-making zones, so it's clear when the oven is ready.

The stand sets the oven at cooking height on four large castors that lock to roll straight and have foot brakes, and the oven locks on with a simple twist fastener, no tools needed. Drop-down acacia wings give prep space either side, with hooks for peels and tools and a steel shelf underneath for the gas bottle. The Balance Placement Peel's perforated aluminium blade lets excess flour fall away before the pizza goes in, and its flat nose keeps the pizza's shape as it slides in. The oven is supplied with a digital thermometer, gas hose and regulator, burner guard, flue outlet, stone adjustment tool and Torx screwdriver.

Gozney Arc XL

Gozney Arc + Arc XL Stand

Gozney Balance Placement Peel
